Agnolotti can be an intimidating pasta shape to take on at home and for good reason. Attempting them for the first time is like giving yourself a master course in pasta making. But once you become familiar with the process, these are very achievable and satisfying to make, and the result is well worth the effort. The pillow of squash–goat cheese filling with a hood of pasta that captures the earthy, walnut-laced butter is super-tasty and fun to eat.
