Our basic formula for chicken broth calls for a 2:1 ratio of chicken to vegetables. The weight of chicken is about twice the weight of the vegetables. And the amount of onion is roughly equal to the carrot and celery combined. Do not skim off the precious golden chicken fat that rises to the top.
