Wheat berries have an amazing texture when simmered. Here, they capture the beautiful flavor of the aromatic broth. I love the monochromic personality of a humble bowl of these, simply garnished with some of the green fronds from a fennel bulb and a drizzle of finishing olive oil. They pair especially well with fish dishes that demand a substantial side, and they bring a bit more presence to a dish of stewed beans or vegetables than a side of steamed rice.
