When the proportions of onion, vinegar, and coarsely ground black pepper are properly struck, this makes a surprisingly delicious, and dead-simple, garnish for raw oysters.

Ingredients

  • ¼ cup [60 ml] red wine vinegar
  • ¼ tsp kosher salt

Method

In a small bowl, whisk together the vinegar, salt, and sugar until the salt and sugar dissolve. Stir in the onion and then, at the very last moment before serving, add the pepper.
