One of my favorites, this spicy, sweet, and savory combo has a Latin vibe.
In a small, nonreactive bowl, combine the jalapeños, shallot, ginger, lime juice, and honey. Using a Microplane grater, grate the garlic into the bowl. Season with salt and pepper. Let sit at room temperature for 1 to 3 hours before serving so the flavors can develop and meld.
