Botan nabe is a Japanese wild boar hot pot that can be made as a sharing dish, or just for one person. There are so many kinds of nabe dishes but this is one of my favourites. It’s very simple, made with wild boar, tofu, shiitake, shimeji, hakusai, carrot and leek with a ponzu dipping sauce. Served from a hot pot in the centre of the table, diners pick up whatever they want to eat and dip it in the ponzu. It’s a great way of sharing food with family and friends!
