These cookies remind me of Mother’s® cookies, those crisp oatmeal cookies glazed with icing that come in the signature red-and-purple packages at the store. This recipe makes big cookies with a pale brown-sugar icing that gets its color from a large spoonful of ground cinnamon. If you want thin cookies, bake the dough just after you mix it, before the butter hardens. For thicker, chewier cookies, chill the dough for at least an hour.
