There are times when iceberg lettuce just has to be faced, one way or another. This is a rather better way than most; the hot bacon fat in the dressing wilts slightly the excessive hardness of this our native commercial lettuce. I can’t imagine anyone actually raising it in a garden, but who knows? The French are importing the lousy stuff at great expense in preference to their own lovely butter-leafed salade.
