Spinach, Mushroom, and Bacon Salad

Although this rather odd combination has become somewhat more familiar in recent years, it’s still passably exotic in some quarters. A very few New York restaurants serve it (always à la carte) at a mark-up of about 3000 per cent. Because it’s unusual and heartier than most salads, and you have to buy that great big bag of spinach anyway, this is an excellent choice for a crowd.
