Do not despise the instant mashed potato. I know of a number of good cooks—some of them famous—who use them and find them, as I do, not only possible but quite acceptable. Instant potatoes do need a bit of touching up, however, and will never really duplicate the purity of flavor to be found in a creamy mound of freshly whipped just-cooked real potatoes.
