Lamb neck is normally used for stew. Bony but tasty, it’s quite cheap; however, its lack of substance must be compensated for with something filling. I have chosen beans because they absorb so much flavor and therefore get the most mileage out of this not-so-meaty cut. Lamb neck isn’t often on display in supermarket meat bins, but if you ask the butcher, he’ll usually oblige.
