Cavateli, a long, crinkle-edged shell, is a more interesting pasta than elbow macaroni (almost anything is). School cafeterias have so stigmatized macaroni and cheese that it’s hard to convince anyone that it can be a good meal, either alone or in the company of roast or broiled meat. Anyway, cavatelli is prettier, holds its bite and shape well, and doesn’t get soggy.
