“Dusted with flour and fried” refers either to the usual condition of “the miller’s wife” or to the way she cooked her husband’s fish. As is the case with almost anything to be sautéed, “quickness” (in the sports-page sense) is essential to this dish. Also, be certain when buying your fillets that they will fit in your skillet.
