An otherwise intelligent and perceptive writer I know remains curiously indifferent to the mysteries and subtleties of Chinese food. Or perhaps not curiously at all, since this is the only thing he ever orders except for the damn roast duck. This fried chicken is pleasant for a change, and you needn’t fear serving it to people who really don’t like Chinese food. The pieces, cut small enough to be maneuvered by chopsticks, make the chicken suitable finger food at parties and picnics, too.
