The complaint most often made about turkey is that it’s “too dry.” Generally, the reason Mum’s Thanksgiving bird bombs out is that she’s had it in the oven since daybreak. In the days when you had to go out in the woods and wing your own, maybe turkeys were tough and really needed all that long, slow cooking.
