Ossi Buchi is a dish that often gets unnecessarily complicated with herbs belonging more properly to Neapolitan cookery than to Milanese. This is a northern Italian specialty, however, and should not be spiced up with a sensational array of discordant flavors. Veal shanks won’t often be found in supermarket bins, but sometimes the butcher has them if you ask. Italian butchers will nearly always have them, and probably better ones from a younger calf.
