Gigot is simply leg of lamb and à la Bretonne means that it will be served with white beans (dried marrow or pea beans). Even in France, it does not necessarily mean that you’re getting the delicate young lamb fed in the salt marshes of Brittany (l’agneau pré salé). It is an unpretentious, yet nonetheless classy dish, which makes it appropriate for a dinner party as well as a family meal.
