Curried Kidneys

I am fond of Indian food and will curry anything that will stand still for it. With all their dietary laws, I have no idea whether Moslems and Hindus eat kidneys any way at all, but if they did, it might be this way. Again, one may use veal kidneys as well as lamb kidneys, keeping in mind that a calf’s kidney is about four times the size of a lamb’s. Always buy them fresh and use them quickly.
