The Szechuan province of China is noted for a cuisine spiced with dried red peppers and hot oil, but this dish is not. At my favorite Szechuan restaurant, the waiter staggers out with a half bushel of beans for one order. You might serve this (real) Chinese vegetable with my Fake Chinese Meal—or just with a bowl of fried rice.
