Stuffed Eggplant

Despite its beauty of form and gentle nature, this bland vegetable polarizes people quicker than a discussion about dope addicts on welfare. Small eggplants (why, oh, why didn’t we go along with the English in calling this by its French name, aubergine?) are better than big ones, but unless you garden, you will never get the baby eggplants—about three inches long—required for many French and Middle Eastern recipes. Invariably overgrown but attractive, eggplants are available year aro
