This is really only mashed potatoes with cheese beaten into them and a few other little touches.
Peel and quarter the potatoes. Boil them in just enough salted water to cover until just tender. Too much water and too much boiling make slushy potatoes. Drain them, put them back into the dry pot, and shake them over low heat to evaporate any remaining moisture. Mash them smoothly with the butter; then beat in the eggs, nutmeg, pepper, garlic, and the ½ cup of grated cheese. Taste and add mor
