When you’re desperate for a nonstarchy vegetable to eke out a measly meal—say there’s a snowstorm; it’s Yom Kippur on the Upper West Side of Manhattan—the makings for this dish are usually in the cupboard.

Ingredients

  • 1 small (2-inch) onion, thinly sliced
  • 1 clove garlic, minced

Method

Preheat oven to 400°.

Sauté the onion and garlic in the olive oil until limp and lightly browned. Add the tomatoes plus their juices, the basil, and celery seed to the skillet. Stir and cook until the tomatoes break up somewhat and about half the juice evaporates. Season with s
