This is Italian but you will probably not have heard of it unless you happen to be Italian. It’s never served in restaurants but is strictly casa cucina. Sformato, which may be made with a number of different vegetables, is a cheap and simple cross between a soufflé and a steamed pudding. Because it doesn’t rise much, it isn’t as tyrannical as a conventional French soufflé and will suffer a little waiting.
