Marrowbones are the cheapest thing you will find on any meat counter and a friendly butcher will often give them away. They are beef shinbones sawed into approximately one-and-a-half-inch lengths so that the marrow can be extracted after poaching and spread on bread or toast. It looks just terrible, but is considered a great delicacy by the French; you will agree if you can overcome your initial shock at its unloveliness. Oysters don’t win any beauty prizes either. Marrow is rich and nutrit
