Ingredients

  • Ripe elderberries 1 pint
  • boiling vinegar ¾ pint
  • salt

Method

  1. Pour the boiling vinegar over the elderberries.
  2. Let the jar stand all night in a cool oven.
  3. Strain without pressure.
  4. Boil the liquid 5 minutes with the root ginger, mace, peppercorns, cloves and shallots.
  5. Bottle when cold, with the spices.
