Procure a Norwich-fed cygnet (these birds are in best condition in September); stuff it with the following preparation:

Ingredients

  • Rump steak 3 lb.
  • shallots 3
  • nutmeg
  • pepper

Method

  1. Chop the steaks very finely.
  2. Also the shallots.
  3. Blend and season with pepper and salt, and
  4. Use this mixture to stuff the bird.
