Procure a Norwich-fed cygnet (these birds are in best condition in September); stuff it with the following preparation:

Ingredients

  • Rump steak 3 lb.
  • shallots 3
  • nutmeg
  • pepper

Method

  1. Chop the steaks very finely.
  2. Also the shallots.
  3. Blend and season with pepper and salt, and
  4. Use this mixture to stuff the bird.

  1. Truss as usual for roast poultry or game.
  2. Wrap up in well-buttered paper and then encase the bird in
