Method

  1. Swell the rice gently with milk or water, season with salt.
  2. Fill a piedish with the cooked game or whatever you want to use up.
  3. Pour over some good well-seasoned stock or gravy.
  4. Cover with a thick layer of the rice nicely domed.
  5. Dust this over thickly with finely grated bread-crumbs.
