This is another ‘very old’ Yorkshire recipe sent from Ross-on-Wye, Herefordshire.

  • Medium oatmeal ¾ lb.
  • plain flour ¼ lb.
  • treacle 1 lb.
  • raw sugar ½ lb.
  • ground ginger 1 teaspoonful
  • mixed spice ½ teaspoonful
  • bicarbonate soda 2 teaspoonfuls
  • lukewarm water 2 tablespoonfuls.

  1. Warm treacle together with the butter.
  2. Mix the oatmeal, sugar, ginger and allspice with the treacle and butter.
  3. Dissolve the bicarbonate of soda in the warm water and mix that in well.
  4. Drop in spoonfuls on greased and floured tins; and
  5. Bake quickly in a hot, but not too hot oven.
