  • castor sugar 2 oz.
  • unsweetened chocolate 1 oz.
  • egg

Method

  1. Prepare the tin as before for almond puffs.
  2. Grate the chocolate.
  3. Blend it with the sugar.
  4. Whisk the white of the egg which must be new-laid (about 2 days old is best), to a stiff froth.
  5. Fold in the chocolate and sugar, and keep on beating.
