Bring a bit of Mexican flavour into your kitchen with this tasty dish of refried beans with all the trimmings. If you like your food spicy, you can increase the amount of chilli you add to the dish. If you are short of time, simply serve with a shop-bought guacamole.
Heat the butter and half the oil in a frying pan over a medium heat, add the onion and garlic and fry for 3-4 minutes until soft.
Add the chorizo, bacon and chicken and fry, stirring, for 5 minutes until coloured and just cooked through. Add the refried beans and tomatoes. Stir in the chilli, jalapeño pepper and coriander and season with salt and pepper to taste. Cook for a further 10 m
