Soups can be made with all manner of mushrooms but the following recipe is particularly good with mousserons. If you can pick these yourself, fresh and clean, do not wash them – it is basically wrong to wash any mushrooms if you can avoid doing so. Discard the stalks; they are tough and have no flavour. This soup can also be made from rehydrated dried mousserons, in which case 125 g (¼ lb) of the dried mushrooms will be enough.
