As mentioned at the beginning of this book, mangetout peas were a discovery in the markets of the South-West twenty years ago. But they already had haricots mangetout so when the peas arrived, they were treated in the same way. This is the recipe we were given then by Jane. Since then it has gradually become clear that this way of finishing vegetables is traditional all over the South-West, even as far away as Les Landes.
