Another neighbour later passed on her method:
Remove the stalk end and any strings from the peas. Heat the fat and start to soften the chopped pork or ham in it. When it has given off some fat and is hot, add the potatoes and continue cooking, turning them from time to time until they are soft and beginning to crispen. Add the peas and turn them frequently in the hot fat to keep their green colour. Continue cooking for 7 to 10 minutes. Sea
