  • 125 g (4 oz) green lentils

Method

Put the lentils into a covered pan with the pork, onion and bouquet garni. Add seasoning and 1 litre (1¾ pints) of water. Bring to the boil and simmer gently for up to 2 hours. Extract the pork and cut it into cubes, putting it to one side. Discard the bouquet garni and clove. Purée the lentils and onion in a liquidizer or food mill, then return them to their liquor together with the cubed pork
