It’s a snap to make a simple shrimp broth with the shrimp shells, which adds an extra dose of flavor to this soup, though you can use light fish stock or water in its place, if the shrimp you’re using are larger than 3⅓5 to the pound, buy an extra 4 ounces or so. The larger the shrimp, the more the 8 used for garnish will take from the soup.
