Bring all the brine ingredients to the boil then allow to cool completely. Marinate the beef in the brine for 4 days, turning every day, then hang in a warm, dry place for 2—3 weeks, or until hard.

Carefully cut away the dried outside and slice thinly on to plates. Poach the baby leeks until just tender. Set aside until cold. Mix the dressing ingredients together and spoon over the leek
