  • Beef tallow (rendered beef fat)
  • 1 pound (about 500 g) fresh-ground 80/20 chuck

Method

  1. Preheat the cast-iron skillet over medium heat and add some beef tallow. Use the spatula to spread the fat, coating the surface of the pan.
  2. Place the ground beef in a mixing bowl and, using the salad scoop, make heaping balls of beef, placing them on t
