  • 12 herring fillets
  • 1 pint double cream
  • 6 tablespoons win

Method

Wash herring fillets; pat dry and arrange in a bowl. Mix cream, vinegar and olive oil. Add finely-sliced onions, peppercorns, apple, beetroot, lemon and bay leaves, and pour over herrings. Cover and place in the refrigerator. Marinate 24 hours before serving ice-cold as an appetiser.
