  • 2 tablespoons butter
  • 1 Spanish onion, coarsely chopped
  • 1 pint

Method

Melt butter; add chopped onion and cook until soft, but not brown. Stir in chicken stock and curry powder; add cornflour mixed with a little water. Bring to the boil and then simmer for 8 minutes. Add egg yolks to hot cream and stir gradually into hot soup.

Remove from fire immediately and transfer mixture to electric blender with 1 apple, peeled, cored and sliced. Blend until smooth or
