  • 1 small clove garlic
  • 6 large ripe tomatoes
  • 1 Spanish onion

Method

Remove garlic skin. Blend 4 tomatoes and 1 clove garlic in electric blender; add ½ onion and ¼ green pepper, cut in rough pieces, and ½ cucumber, peeled and cut in cubes, and blend again. Strain mixture into a large tureen or serving bowl and chill in the refrigerator. Just before serving, blend together olive oil, lemon juice, salt, cayenne pepper and tomato juice; stir into the above mixture
