Parboil diced salt pork or green bacon in water for a few minutes. Drain and sauté in butter. When meat is browned, remove from pan and keep warm. Sauté diced boiled potatoes in the fat until they are golden. Combine lightly-beaten eggs with meat, finely-chopped parsley and chives; add salt and pepper to taste and pour over potatoes in the pan.
