  • 1 pound salt cod fillets
  • 6 tablespoons olive oil

Method

Soak cod in water overnight. Drain and place in a saucepan; cover with cold water and bring slowly to the boil. Remove from heat and allow to steep for 10 minutes.

Drain fish fillets and sauté gently in olive oil until golden. Remove from heat; pour vinegar over and allow to stand for 5 minutes. Transfer fish to a warm serving dish and pour onion dressing over it.
