Place cleaned fish in a flat dish large enough to hold them. Slice mushrooms thinly and add to dish. Combine finely-chopped garlic and coarsely-chopped spring onion, or onion or shallots, with olive oil, soy sauce, cornflour, dry white wine and salt and black pepper, to taste. Mix well and pour over fish.
