  • 4 ounces flour
  • 1 level tablespoon sugar
  • 1 generous

Method

Sift together flour, sugar and salt. Beat together whole eggs and egg yolks and add them to the dry ingredients. Mix in the milk, melted butter and cognac smoothly. Strain through a fine sieve and let batter stand for at least 2 hours before cooking the pancakes. Batter should be as thin as cream.
