  • 1 apple, peeled, cored and sliced
  • 4 shallots, finely chopped
  • ¼ pound butter

Method

Bake the pancakes as above, using either an electric griddle or a thick-bottomed frying pan.

To make Filling

Sauté sliced apple and chopped shallots in butter until they are soft. Add curry powder, crushed coriander and flour, and mix well. Add just enough milk to make a thick paste. Stir well-flavoured béchamel sauce into mixture and add lemon juic
