  • 2–3 dozen oysters
  • 2 eggs, beaten
  • 4 tablespoons double cream

Method

Shell oysters. Combine beaten eggs and cream in a bowl. Add salt and freshly-ground black pepper, to taste. Dip oysters in egg mixture, then in cornmeal or crumbs, and allow to set on aluminium foil for about 5 minutes before cooking.

Melt butter in a large, thick-bottomed frying pan or deep-fryer. Add olive oil; bring to frying temperature and cook oysters in fat until they are golden
