Ingredients

Basic Poached Scallops

  • 3 tablespoons olive oil
  • 1 tablespoon wine vinegar
  • salt and fre

Method

Prepare scallops as above. Drain, slice and, while still warm, toss in a bowl with olive oil, vinegar, salt and freshly-ground black pepper, to taste.

Chill. Just before serving, add mayonnaise and toss. Serve in a lettuce-lined bowl.
