Method

Defrost prawns; roll in cornflour and place on a platter in steamer with finely-chopped shallots, sliced mushrooms and cucumber, soy sauce and white wine. Season with a little freshly-ground pepper; and cook over 2 inches of fast-boiling water, covered so that the platter is entirely confined in steam,
