Method

Trim and dice roast beef. Peel, core and dice apples. Clean and dice celery. Combine diced beef, apples and celery with shallots, garlic and parsley in a salad bowl. Season to taste with olive oil, vinegar, salt and freshly-ground black pepper, and chill. Makes an hors-d’œuvre
