Method

Ask your butcher to prepare 4 tournedos for you – slices cut from fillet, usually encased in a thin layer of fat. Season with freshly-ground black pepper, to taste, and sauté in butter and olive oil until well browned (2 to 3 minutes on each side) but still pink and moist in the centre.
